My Comfort Foods

 


  





These are my main comfort foods. I love making chocolate chip cookies! I feel like they have the right amount of chocolate with just a hint of saltiness from the salt on top. There is nothing like having a warm ooey gooey chocolate chip cookie on a cold day. Especially being upstate in Fredonia. Just coming home from class and having it as a reward is just pure bliss to me. I'll post the ingredients for it below. :)

My other comfort food has got to be mac and cheese! This is not the typical mac and cheese. This has a kick of flavor that you do not want to miss out on. It is gooey in the inside with the perfectly golden and crispy outside you do not want to miss out on. I love making this for all of the holidays. There is just something about mac and cheese that makes you feel so warm on the inside that it has to be one of the best comfort foods. Ever since I was younger my mom would make this with chicken cutlets and cole slaw when we just wanted something that would make us feel good. That was the perfect dinner. I can still imagine what it tastes like by just looking at the picture. I'll post the ingredients for it below!

I feel like the broccoli and cheddar bread bowl at Panera Bread is a great comfort food. It is so warm and tasty. I went to Panera Bread with my friend in Buffalo. We like to go over there after we go shopping at the Walden Galleria. It is so good that I just want more to take home with me. 

Chocolate chip cookies:
Melt and carefully brown 8 tbsp of high quality butter. I like to use Kerrygold brand. 

Put in a large bowl:
- 1/2 cup of white sugar
- 1/2 cup of dark brown sugar
- 1 egg
- 1 tsp of vanilla
- 1/2 tsp pf salt
- 1/2 tsp of baking soda
Mix them all together!
Once mixed get another bowl and add:
- 1 1/3 cups of all purpose flour
-  1/2 cup of semi sweet chocolate chips
- 1/2 cup of dark chocolate chips
Bake for 10-12 minutes at 350 degrees. 

Mac and cheese:
-  1 pound of elbow macaroni 
- 6 tablespoons unsalted butter
- 3 tablespoons of all purpose flour
- 4 cups of half and half at room temp
- 2 tablespoons of cream cheese at room temp
- 1 1/2 cup of sharp cheddar (shredded)
- 1 cup of colby jack (shredded)
- 1/2 cup of smoked gouda (shredded)
- make sure to also put cheese on top as well for the topping
- 2 teaspoons smoked paprika
- 1 teaspoon of garlic powder
- 1 1/2 teaspoon of black pepper
- 1 teaspoon of salt to taste
- 1 teaspoon of nutmeg
- 1 teaspoon of cayenne
- 1 tablespoon of dry mustard powder
Put it on broil and keep an eye on it that's it won't burn. Wait until it gets a golden brown color.
